Restaurant Gas Line Installation in Phoenix

Short answer

A new restaurant gas line is sized from the total Btu load of every appliance, drawn up for the city, installed with a shutoff at each appliance, pressure tested and inspected. Southwest Gas sets or upgrades the meter only after the city clearance reaches it. Start early, because the utility's lead times can run 6 to 12 weeks.

Pipe is sized for everything firing at once

Gas demand is the sum of the maximum input of the appliances served, assuming all could run at full capacity at the same time. A lower diversity figure is allowed only where diversity can be established.

What the permit drawings must show

The plans mark the gas meter as existing or new with its capacity, list every appliance and its Btu input, and give the total developed length from the meter to the most remote appliance. Gas at 2 psi or more needs a Southwest Gas confirmation letter in the drawing set.

Elevated pressure needs utility approval first

Standard delivery is 1/4 psi (7 inches water column). A 2 or 5 psi request needs written approval from Southwest Gas Engineering before the house line is installed, and is not granted if the interior pipe would be smaller than 4 inches at standard pressure.

No meter until the city clears the line

Southwest Gas must receive the city's gas inspection and clearance. The meter is set no sooner than 5 working days after that for loads under 1,000 cubic feet per hour, and 8 working days above it.

Test pressure is higher in Mesa

Mesa

Mesa replaces the base test with at least 10 psi gauge, and at least 60 psi for welded piping or gas above 14 inches water column. Dial gauges must read in 0.1 psi steps for tests of 10 psi or less.

The hood system shuts off the gas

When the hood's fire-extinguishing system activates, it must automatically shut down fuel and electric power to the cooking equipment, and the reset must be manual.

Start with the opening date and work backward

The gas line is usually the item that decides whether a restaurant opens on time, because two clocks run at once: the city's and Southwest Gas's. Southwest Gas's commercial package for Central Arizona says underground work (main, service line and riser) typically starts at least 6 weeks after the paperwork is signed, and a main design, permit, land rights or elevated pressure adds another 6 weeks. A load over 1,000 cubic feet per hour may need a rotary meter designed and built, which takes 2 weeks, or 4 over 7,000.

So the first job is the load list, not the pipe. Once we know every appliance and its rating, you can apply to Southwest Gas while the drawings go through the city. Doing those in order instead of in parallel is how kitchens end up finished and waiting on a meter.

What we need from you on the first call

Most of the design comes from four things you probably already have:

  • The equipment schedule. Make and model of every range, fryer, griddle, broiler, oven, wok, steamer and water heater, so we can read the Btu input off the spec sheets.
  • The floor plan. Where the cooking line, the water heater and the meter sit. Distance drives pipe size as much as load does.
  • The space history. A second-generation space has an existing meter and piping we check before we plan around them.
  • Your opening target. We schedule the pressure test and inspection backward from it.

If you plan a second fryer next year or patio heaters for the winter, tell us now. Section 402.2 of the fuel gas code sizes pipe on everything running at once, and adding capacity during the build costs far less than re-piping a kitchen that's open for service.

Drawings, permit and the 2 psi decision

Phoenix's gas piping plan review checklist asks for the meter marked existing or new with its capacity, each appliance with its Btu input, sizing calculations with the code table used, and the total developed length from the meter to the farthest appliance. We prepare that set and submit it.

The pressure question gets settled here too. Southwest Gas delivers at a quarter pound (7 inches water column) as standard. A building can ask for 2 or 5 psi, which lets smaller pipe carry the same gas, but the utility's elevated pressure form says it won't be granted if interior pipe would be smaller than 4 inches at standard pressure. The install, valve by valve

The piping usually runs along the wall behind the line to a manifold, with a branch dropping to each appliance. Every branch gets a shutoff valve within 6 feet of the appliance and ahead of the connector, a sediment trap where the appliance needs one, and a listed connector with a restraint cable for anything on casters. The hood's fire-extinguishing system ties into the gas piping. Phoenix's fire code requires it to shut off fuel to the cooking equipment automatically when it discharges, with a manual reset. We install the gas shutoff valve in the line; HQ does not install or service the suppression system itself, so your fire suppression contractor and your hood installer are part of the same schedule. Test, inspection and turn-on, city by city

Before any gas goes in, the new piping is pressure tested with air or nitrogen and inspected while the joints are still exposed. Phoenix lists it as commercial inspection 235, gas piping. The test itself differs across the Valley:

Phoenix amends only Chapter 1 and the flange section of the 2024 fuel gas code, so the base test applies there. Our commercial gas pressure testing page has the full city list.

Once the inspector signs off, the city sends the clearance to Southwest Gas. The meter goes in no sooner than 5 working days later (8 for loads over 1,000 cubic feet per hour). Southwest Gas runs its own leak check at turn-on, and the code requires each appliance connection checked and the line purged before the kitchen fires up.

When a new install is the wrong answer

Not every kitchen change is a new gas line. Phoenix's gas clearance table, published with Southwest Gas and the Arizona Corporation Commission, says replacing an appliance in kind with no piping change needs no permit. If you're just swapping a worn fryer for the same size, that's a hookup, not an install. If you're adding equipment to a working kitchen, start with whether the existing line can carry it.

A few things sit outside our work: the meter and service line belong to Southwest Gas, the hood suppression system belongs to a fire suppression contractor, and portable propane equipment is not something we service.
