Chandler requires restaurants to keep all grease device pumping, cleaning, maintenance and repair records on site for three years. Each entry needs the service date, who did it, what was done, how much material came out, and where it was disposed. The city's rule of thumb is to clean before FOG and solids reach 25 percent.
The five things each entry must show
Per the city, records must include at a minimum:
- 1Date of service.
- 2Who did it. For a hauler, the name and address of a Maricopa County Environmental Services Department licensed non-hazardous liquid waste hauler. For self-service, the employee's name and title.
- 3What was done. Pumped, repaired, inspected, baffle replaced, and so on.
- 4Total quantity of material removed.
- 5Where it went. The final disposal location, including name, address, date and quantity received.
A proper hauler ticket usually covers items one through five in one sheet. Staple it to your own note about the device's condition and you're set.
How often to clean it
Chandler doesn't set a fixed calendar in its guidance. It gives a rule of thumb: the combined volume of FOG and solids in the device should not exceed 25 percent of its total capacity. If FOG is seen leaving the device, the cleaning frequency must go up. The city adds that the practices of your staff have the biggest impact on how often a device needs cleaning. How this compares
