Short answer

What was wrong

Picture a restaurant manager arriving to prep and finds water standing around a kitchen floor drain, with a second drain gurgling when the three-compartment sink empties. Service is hours away. That's stressful, and it's fixable.

When several drains in a kitchen back up together, the stoppage is usually downstream of all of them, in the shared line that carries the kitchen out to the building drain or the interceptor. One drain backing up alone points to its own branch. Two or more together point to the trunk.

How we find the cause

Dispatch asks three things: which drains, whether any toilets or restroom sinks are affected, and what time you open. Restroom fixtures backing up as well means the problem may be the building's main sewer, which changes who is responsible and what tool to bring.

On site, the tech starts with a cable machine, because it's the quickest way to open a line. A jetter goes on the truck as the backup. The cable tells us a lot. We feel whether the head hits soft grease, a hard plug, or something solid like a foreign object, and what comes back on the cable shows what the line has been carrying. If it opens and keeps flowing, we check the line is clear to the interceptor or the main. If grease keeps returning, we say so and hold a jetting proposal for the permanent fix.

What fixes it

The cable gets the kitchen working again that day. A restaurant with a repeat stoppage needs more than that. Hydro jetting scours grease off the full pipe wall instead of punching a hole through it, and a camera pass afterward shows whether the line is sound or has a belly, a break or roots. What to know before you call

Stop pouring hot water and degreaser down the drains, since that moves grease deeper where it cools. Keep staff out of the standing water, and put the dishwasher and prep sinks on hold until the line opens.
